Two comfort foods together is better than one. This creamy goodness brings together French onion soup flavor to the creamy comfort of Mac and cheese.
Caramelized onions:
Yes these take the longest to cook in this meal but I promise it is so worth it. Take your time and cook on low stirring frequently so nothing sticks to the pan. Once golden, add aromatics and deglaze with red wine.
Cheese Blend
It is true that freshly shredded cheese makes your Mac and cheese much better. For this recipe, I am using cheddar, white cheddar, Parmesan and Gruyère.
Ingredients:
4 yellow onions
1/3 cup red wine to deglaze pan
1 cup beef broth for onions
1 box Elbow pasta
1/2 cup Parmesan
1/2 cup cheddar cheese
1 cup white cheddar
1 cup gruyere cheese
1 fresh Thyme
1 Bay leaf
1/2 stick butter
2 tbsp flour
1 cup milk
2 cups beef broth
Salt & pepper
Directions:
1. Cook down onion in olive oil on medium heat stirring consistently until golden.
2. Add bay leaf, thyme and deglaze woth red wine. Add beef broth ans simmer until liquid is absorbed.
3. Cook pasta according to package.
4. Shred cheeses.
5. In a pan, add butter and flour until flour is absorbed. Add milk and stir until thickened. Add beef broth and allow to simmer until gravy like consistency.
6. Add cheese and carmalized onions.
Add pasta and enjoy❤️
