Lasagna Soup

The taste of lasagna in half the time and perfect for this soup season. It's so warm and cozy for this soup season and most importantly, filling.



Ingredients:

  • 1 lb ground beef

  • 1 yellow onion

  • 2 chopped carrots

  • 8 oz Cream cheese

  • 4 cups Vegetable broth

  • 1 cup Cheese mixture (mozzarella and Parmesan)

  • 6-8 Lasagna sheets broken up

  • 1 can tomato sauce

  • 1 can petite tomatoes in juice

  • Salt & Pepper to taste

  • 1 tbsp Garlic powder

  • 2 tbsp Italian seasoning



  1. In a pot, heat avocado oil. Add onions, carrots, salt & pepper and allow to cook down.

  2. Make a well and add your ground beef allowing it to seat on one side before breaking it apart.

  3. Add garlic cloves, garlic powder and Italian seasoning. And stir.

  4. Add tomato sauce, diced tomatoes, cream cheese and broth.

  5. Allow to simmer until cream cheese melts before adding in cheese mixture and lasagne pieces.

  6. Simmer for 10 minutes before checking lasagna is cooked. Add fresh parsley and serve.
