Pho is one of my favorite things to eat throughout the year and it is definitely a go to when I feel under the weather.
I love using cheat method because it cuts that cooking time so much. In the traditional way to make pho, it can take hours to develop a rich flavor in the broth. And when I am craving it, I do not have patience to wait for hours.
So here she is:
Ingredients:
2 tbsp avocado oil
1/2 yellow onion
5 garlic cloves
2 shallots
1 ginger root
2 star anise
1 tsp black peppercorns
3 Cardamom pods
1 cinnamon stick
5 cloves
2 tbsp chicken bullion
4 cups chicken broth
2 cups water
1 rotisserie chicken
Toppings: cilantro, green onions, been sprouts, basil/ Thai basil, and bean sprouts.
Sauces: hoisin sauce and siracha.
Directions:
Heat avocado oil, rough chop onion, shallot, garlic and ginger and allow to cook in oil until a bit charred.
Add cloves, star anise, peppercorns, cinnamon stick and continue to cook until fragrant.
Add carcass of rotisserie chicken and stock.
Allow broth to come to a boil then reduce to simmer for 30 minutes.
Cook your pho rice noodles according to package.
Drain broth from all contents so you are left with only the clear broth.
Assembly your plate with noodles, shredded rotisserie chicken, cilantro, green onions, bean sprouts and basil.
Enjoy while it’s warm!
