Homemade Pesto

How many of us have gone through a week without using a box of their greens they were going to use for a salad. If you have greens that are wilted or even yellow, do not toss them out, use it to make this home made pesto.



This is one of my favorite hacks because:

  1. It allows to save the food that otherwise would be thrown away.

  2. you can store it in the fridge for up to two weeks to use on pasta and sandwiches.


ingredients:

1 package of wilted greens

1 bunch fresh basil

1 cup cashews

1 tbsp salt & pepper

3 garlic cloves

pinch of red pepper flakes

1 1/2 cups olive oil


Directions:

  1. Blend everything together until you get your desired consistency.

  2. Place in the fridge for 10 days to use on pasta or toast.
