Scallops are one of my favorite seafoods to cook. Not only are they delicious but they are so fast to prepare. So naturally this is one of my favorite recipes to make after a long day.
I loved orzo as a child, and it was the first pasta I cooked comfortably. Orzo is a great addition to dishes if you have children because it is easy to eat and prepare.
Ingredients:
Lemon butter orzo and scallops
1/2 lb scallops
1 cup Orzo
1 Lemon juice
1 Lemon zest
1/2 stick Butter
1/4 cup w heavy cream
Handful Spinach
1/2 cup Parmesan
Salt & pepper
1 tbsp Garlic powder
Fresh Parsley for garnish
Scallops Dorections:
Season scallops with salt, pepper and garlic powder.
Add avocado oil to a skillet and add scallops in. Cook scallops for 2-4 min on each side or until you get a crust.
Flip scallops in pan and add some butter.
Base scallops in oil and butter mixture.
Top with parsley and lemon juice.
Orzo Dorections:
Boil 3 cups water. Add salt to boiling water and 1 cups orzo until al-dente.
Save 1/2 cup of pasta water and drain the remaining water.
Add orzo back in pot. Add heavy whipping cream, lemon zest, lemon juice, Parmesan, and parsley.
4. Layer orzo on plate and add scallops on top.
Pair with rose, Zinfandel or Pinot.
