Mediterranean Dinner

Mediterranean is usually my go to whether we go out or eat at home. A big reason for that is the ease of putting Mediterranean meals together.


To start off, we are making Tztaziki spread. this yogurt based dip is perfect on its own and with any meats. It is light and refreshing and filled with protein from the Greek yogurt used.



Taziki spread

  • 1 cup Greek yogurt

  • Salt and pepper

  • 1/2 tbsp Garlic powder

  • 2 Cucumbers

  • 1 garlic clove

  • 1 bunch Dill

  • 1 bunch of mint

  • Olive oil to top with

  • Lemon juice to top with

Directions:

  1. Wash and peel your cucumbers.

  2. Shred cucumbers on top of paper towel and squeeze out excess water.

  3. To then shredded cucumbers, garlic clove, chopped fresh mint, chopped fresh dill, salt, pepper and garlic powder.

  4. Add greek yogurt to the chopped herbs and cucumber mixture. Mix it together.

  5. Top with olive oil and lemon juice.

  6. Enjoy by itself as dip or pair it with your meat


Next up- my favorite carb Of all time - Rice!

Not just any rice, we are making aromatic saffron rice.



Saffron Rice

  • 3 cups Basmati rice

  • 3 Pinches of Saffron threads

  • 2 cubes of vegetable Buillion


Directions:

  1. Rinse and drain rice and add to pot.

  2. Grind saffron threads until it is in powder form.

  3. Pour water over powder and pour into a one cup measuring cup.

  4. Continue to pour water over rice until you have the desired amount you want.

  5. Add vegetable Bouillion

  6. Let rice come to a boil and then reduce heat to simmer and place lid.

  7. Allow the rice to cook without removing the lid for 30 minutes.

  8. Enjoy 💛
