Ahhh the weather is starting to change and although I love the summer, I love fall even more specifically for the food.
First, I find it much more manageable to cook for multiple reasons. 1. the weather cools down which means that being in your kitchen is not as much of a burden.
2. One pot meals or comfort foods. Like this shepherds pie recipe which is one of my favorites.
3. Food lasts longer, its cooler so I can make more food and store it for one or two days without worrying it will go bad faster.
Shepherds Pie Comfort ☺️
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
1 lb ground beef
5 russet potatoes
1 cup Peas
1 cup Carrots
1 cup Corn
Salt & Pepper
Cumin
Boursin Cheese Puck
Sprigs of thyme
1. Boil potatoes and once softened, mash with a ouch of Boursin cheese
2. Soften onion and garlic with salt & pepper. Add your ground beef, cumin and thyme sprigs.
3. Once browned, add both and once liquid starts to be absorbed, add corn, carrots and peas.
4. Once cooked add to your baking dish, top with mashed potatoes. Drizzle olive oil and let it broil in oven for 10-15 minutes.
