This combo is perfect if you like a little salt and sweet. The saltiness from the pancetta pairs perfectly with the sweetness of the peas.
I love a hearty pasta with this dish since all the ingredients are chopped fairly small like a cavatappi pasta pictured below. My favorite are from banza because they have a higher fiber and protein content since they are made from garbanzo beans.
Ingredients:
16oz shrimp
4oz pancetta
8oz pasta box
1 cup cream
5 oz arugula
1 cup frozen peas
1/2 cup pasta water
1/2 cup Parmesan
1 tbsp pepper
1 shallot
Directions:
Cook down shallot in avocado oil.
Add pancetta to shallots and cook until pancetta is crispy.
Add garlic and shrimp to pan.
Add cooked pasta.
Add cream, pasta water and Parmesan.
Add arugula and peas.
Serve and enjoy!
