I only recently learned of tips and tricks to perfect scrambled eggs and they come out perfect every single time.
The biggest tips:
Start off with a hot pan but turn down the heat on low when you are scrambling the eggs.
Stir the eggs constantly to create "ribbons" while cooking the eggs. This is what creates the fluffy texture in the end.
Turn off heat while eggs are slightly so they don't overcook while playing.
Ingredients:
3 eggs
2 tbsp butter
1 bunch of chives
1/2 cup Parmesan
1/3 cup heavy whipping cream or milk
Salt & pepper to taste
Directions:
Beat eggs and milk together until there are no streaks of white and it is a uniform yellow color.
Heat pan and add butter.
Once butter is melted, reduce to low heat and add eggs.
Stir eggs consistently until it becomes firm but still a bit runny.
Turn off heat and plate. Top with Parmesan cheese and chives and enjoy!
