Zuppa Tuscana

If one of your favorite soups at Olive Garden is zuppa Tuscana like me then you are going to want to stick around for this one.



Ingredients:

  • 1 bundle kale

  • 5 russet Potatoes

  • 1 cup Cream

  • 1 onion

  • 6 garlic cloves

  • 8 cups chicken stock

  • 1 lb Sweet Italian sausage

  • Parmesan

  • 5 Bacon strips


  1. Crisp up 4-5 bacon strips them set aside on a paper towel.

  2. Cook onions in some of the bacon fat.

  3. Add Italian sausage and cook until brown.

  4. Add garlic, potatoes and broth.

  5. Allow to come to a slow boil (med heat) then simmer for 25- minutes until you can easily pierce a potato with a fork.

  6. Add cream and kale, turn off heat and place lid on for a few minutes.

  7. Serve with crispy bacon and Parmesan cheese.
