If one of your favorite soups at Olive Garden is zuppa Tuscana like me then you are going to want to stick around for this one.
Ingredients:
1 bundle kale
5 russet Potatoes
1 cup Cream
1 onion
6 garlic cloves
8 cups chicken stock
1 lb Sweet Italian sausage
Parmesan
5 Bacon strips
Crisp up 4-5 bacon strips them set aside on a paper towel.
Cook onions in some of the bacon fat.
Add Italian sausage and cook until brown.
Add garlic, potatoes and broth.
Allow to come to a slow boil (med heat) then simmer for 25- minutes until you can easily pierce a potato with a fork.
Add cream and kale, turn off heat and place lid on for a few minutes.
Serve with crispy bacon and Parmesan cheese.
